Brie & Camembert

Description:
Brie & Camembert are classic soft ripening cheeses. These cheeses are surface ripened to produce a bloomy, white rind that covers the cheese and matures over time.

Brie has a golden, buttery interior and ranges in flavour from mild to strong, depending on the age.

Camembert is similar to Brie however it has a more fluid consistency. The interior varies from yellow, waxy or creamy – depending on ripeness – and the flavour consists of mushroom undertones.
Storage:
Brie and Camembert cheese should be stored in waxed, porous paper to ensure the cheese can continue to “breathe” and ripen over the life-span of the product.
Preparation:
Brie and Camembert are delicious served at room temperature and should be removed from refrigeration approximately one hour before serving.
Wine Recommendations:
Depending on your palate, Brie and Camembert cheeses can be served with either white or red wines. If you enjoy white wine, choose a fruity wine such as Chardonnay or a sparkling wine. For red wines, a Bordeaux or Pinot Noir is recommended.

Cheddar

Description:
Cheddar cheeses are acidified and salted in the curd, then shaped in a mold and ripened. It is available in a range of ages from one month to five years and also comes in a variety of flavours – smoked, mild, medium, aged and sharp to name a few.

The Margaret River Dairy Company Cheddar Cheeses are handcrafted & preserved in wax for a truly gourmet cheddar experience. The waxed coating prevents the cheddar from drying out and enhances the flavour.

The range consists of a Vintage Cheddar that is aged for a minimum of 12 months and a variety of Club Cheddars. Club Cheddars are softer and more crumbly in texture and allow for condiments or seasoning to be added throughout the product process. Margaret River Dairy Company’s Club Cheddar range includes Original, Smoked, Port and Sweet Chilli.
Storage:
Due to the long life of Cheddar, once open, Cheddar will last for at least two weeks if it is well wrapped and refrigerated. If any mould starts to grow on the cheese, simply cut off approximately 2cm from all sides of the visible mould.
How to cut waxed cheese:
Step 1. Peel off the label.
Step 2. Slice the wax completely off the top and bottom edge of the cheese. 
Step 3. Place a small cut down the side cutting into the wax only.
Step 4. Peel off the remaining wax.
Preparation:
Cheddar cheeses are the most popular and versatile variety of the cheese world. Cheddars can be grated, cubed, melted or sliced to include in your favourite recipe dish.
Wine Recommendations:
Enjoy Cheddar cheeses with white wines such as Chardonnay or Sauvignon Blanc, or red wines such as Pinot Noir.

Feta

Description:
Feta cheese dates back centuries and is characterized by its chalky white appearance, crumbly texture and salty flavour. Feta is usually packed in brine, however it is also delicious marinated in a mixture of herbs and spices.
Storage:
Store Feta well wrapped in cling wrap or in it’s original packaging in your refrigerator.
Preparation:
As Feta is usually stored in brine to preserve its shelf-life, to reduce the salt content, rinse in cold water and dry before serving.

Feta is popular in salads, used as a topping, or in baked recipes.
Wine Recommendations:
Feta can be enjoyed with either light white wines such as Sauvignon Blanc, or fruity red wines.

Condiments: Kalamata Olives, Red Peppers, Fresh Herbs

Baked Ricotta

Description:
The word Ricotta is Italian for “recooked” and is the whey collected from the process of making certain types of cheeses.

Ricotta is a soft, grainy cheese and is low in both sodium and fat.

Baked Ricotta is twice-cooked and delicious in both plain and flavoured varieties.
Storage:
Baked Ricotta stores best in the vegetable crisper of your refrigerator. Keep cheese well covered in the original packaging, or cling wrap.
Preparation:
Baked Ricotta is very versatile and can be added to a cheese platter, salad, pasta dish, or used as a dessert cheese.
